Currently Roasting:

  • This microlot from renowned coffee expert Israel Degafa comes from producers in Yirgacheffe. At his washing station, Israel uses a proprietary anaerobic fermentation protocol he's dubbed "alcoholic" due to the crisp, winey cups it produces. It's also juicy and sweet with big notes of strawberry, blackberry, banana, lemonade and pure cane sugar.

  • Natural (dry) processed after 96 hours of anaerobic fermentation. Sun dried on raised beds.

  • Smallholder farmers in Yirgacheffe| Israel Degafa’s washing station

  • Sama Village, Anasora, Oromia (washing station)

  • Strawberry, banana, blackberry, lemonade and sugar cane

Perhaps the only thing that rivals my stubborn independence is my dependency on espresso.

The first espresso I ever tasted was in Fairhope, Alabama with a friend Jihad from Jersualem. Italian roast, burnt, intense, dirty demitasse, poorly pulled but paired well with a cigarette & thought. I was jittery and ready to theorize existence.

That was quite some time ago, and since then my daily consumption has A) grown… a lot B)guided me to pursue roasting my own beans to stave off the pricey alternative of visiting my favorite coffee shops 3x a day.

So, in 2021 I built my own roaster with a heat gun & flour sifter. (Thank you Larry Cotton) Ordered my first green coffee beans. (Thank you Happy Mug) My roaster is on version 3.1 and yes there have been multiple catastrophic fires, but a new design is (usually) exciting for me.

I realized that light / fruity / acidic roasts are pleasant af and that it was quite fun to introduce the less cocoa-esque side of coffee roasts with friends.

I then started using the advent of “ai” to create fun monthly brands and ship boxing experiences based on the monthly roasts of coffee to friends.

To maximize my enjoyment of each roast and my limited budget, I bought a refurbished Gaggia Classic Pro and spent a few months modding it to something called a Gaggiuino.

The Gaggiuino is probably the most technical thing I have done and I will add the details of that journey to the Side Projects page, when I can. Essentially, I added a touch screen, computer, and upgraded internals to mimic any other style of espresso machine that are typically $3,000+.
